Chicken Meatball Recipe

CHICKEN MEATBALL RECIPE

I almost always cook dinner on Sunday night, and am starting to love the tradition of cooking a lavishsunday night meatball recipe meal once a week. A home cooked meal is something that I enjoy, especially when I have a busy week and simply want to enjoy food, a good recipe, and good company. Meatballs take a little while to make, but I usually make a batch and freeze the leftovers. That way I have a delicious but quick dinner or lunch when I don't have the time to cook. Prep Time: 15 min Baking Time: 30 minutes Serves: 4 people

Ingredients:

1 pound ground chicken breast

1 large egg

1/2 cup grated parmesan cheese

2 Tablespoons Italian Parsley

2 TBSP chopped Basil

4 garlic cloves, peeled and finely chopped

1/2 green pepper, chopped

1/2 cup chopped spinach

1/2 cup finely chopped onion

1/2 cups bread crumbs 

1/2 cup chicken stock or water

salt and pepper to taste

1 pound fresh mozzarella ball

1 jar marinara (I recommend Rao's)


1. Preheat oven to 350F. Combine all ingredients except marinara sauce and mozzarella cheese in large bowl . Using your hands or a mixing spoon, blend ingredients together. 

2. Add a thin layer of marinara sauce to bottom of 8 inch baking pan.

3. Shape meat into balls and place them over the marinara sauce in the baking pan. I usually make them 1 to 2 inches round, make them however large you want them.

3. Bake at 350 for 25 minutes, checking to make sure they are fully cooked. 

4. Add a slice of mozzarella cheese to each ball.

5. Serve alone, over pasta, or with salad. Garnish with parmesan cheese and parsley. ENJOY.

I was quite surprised when I read the recipe because it is very similar to mine and I am Italian. I learned to make meatballs and sauce from my grandmother years ago. I’ve never used that much water but have used a small amount of water when making the meatballs. You didn’t give your recipe for the Marinara sauce or do you use ready made? I have used ready made sauce but have added to it to enhance the flavor. I look forward to more of your recipes. This may sound crazy to some people but I really love to cook. I don’t make gourmet dishes but I am quite a good cook with satisfying home meals. Being that I was born and raised in New Orleans, LA I also cook Gumbo, and love seafood.
