Looking for some delicious finger food recipes for the next brunch you are hosting? Take the tasty lox sandwiches and make them appropriate for the occasion. These bites are inspired by Barney’s Greengrass on the Upper West Side of Manhattan. Their smoked salmon sandwiches quickly became my regular dish to order after several friends and I had brunch there one sunny summer Sunday.

The delicious bagel sandwiches are the perfect size to serve when you have friends over for brunch (or lunch). One of the most important pieces of getting this recipe right is to start with freshly baked bagels and quality smoked salmon. I used Regal Salmon for my sandwiches. However, if you just can't find it at your grocery store, other brands work too.

One bagel sandwich serves 1 person if you are only serving lox sandwiches, but this of course changes depending on how much other food you have. If you have an array of other foods, I would just prepare 1 bagel per 5 people. Prep time: 15 minutes

Ingredients:

1 bagel, toasted and cut on an angle into 1/2 slices

1 tomato, cut into 1/4 slices the size of the bagel pieces

1/2 fresh onion, sliced thin and cut to the size of the bagel slices

4 ounces smoked salmon

Cream cheese

Capers

Several sprigs of fresh cut oregano

Optional: Fresh cut parsley for garnish

Spread a thin layer of cream cheese onto the toasted bagel slices. Add a slice of tomato, followed with a slice of onion. Add a piece of smoked salmon, then finish with 3 or 4 capers and several oregano leaves. Repeat with all the bagel pieces.

Arrange the salmon bagel bites on a tray, and garnish with sprigs of parsley. Crack pepper over the bagel bites, then put into the fridge until you are ready to serve them.

Best served within an hour of preparation.
